Can anyone suggest a book that contains sayings that the Holy Desert Fathers as well as Orthodox Saints through the ages have made about music?Thanks in advance for any help.

You may find this book helpful.

Music and Worship in pagan and Christian Antinquity

The writer is Catholic and not Orthodox and the work may be more general than you are looking for, but it is the only book on early music that I have come across.
