A friend of mine, needs to write a paper on his goals as a teacher this year, and needs to pick a person's philosophy to use as his base. He was hoping to use a Saint's writing on the subject. Can anybody help him out?

St. Justin Popovich had some profound things to say in his essay Humanistic and Theanthropic Education, which is available in two different books: Orthodox Faith and Life in Christ, and The Orthodox Church and Ecumenism (that latter is a much more vibrant translation, IMO). Of course, there might be potential problems, in that St. Justin obviously sees God and Orthodoxy (and her saints) as the key to a good education, which probably wouldn't fly if your friend were a public school teacher. St. Justin is also very much against things like a seperation of religion and formal education. But in any case, St. Justin has a lot of insightful things to say in that essay, and a number of his other essays, though the other ones might get into a bit too much of an epistemological discussion in which religion/spirituality is the solution.
