I'm trying to locate a troparion for St. Olympia for a Church School project.  Can anyone help me out?  Thanks!

There does not appear to be specific hymnography written for this saint, so the troparion and kontakion for her would be the general one for a venerable woman:

Troparion:

That which was created in the image of God
Was preserved in you, O Mother;
For taking up the cross you followed after Christ.
By your deeds you have taught us to reject the flesh, for it passes away,
But to care for the soul as a thing immortal.
Therefore, O venerable (name), your soul rejoices with the angels.

Kontakion

Because of love for the Lord, O venerable (name),
You came to despise the desire for comfort,
You illumined your soul with fasting,
And with strength you prevailed over wild beasts:
Therefore through your prayers overturn the insolence of those who oppose us.

Unfortunately the book is out of print.  It  is available from Amazon for about $9 and from Concilliar Press for $10.  A delightful book!  I have it in my church library, and it may be available in one close to you.  Hope you can find it.  Let me know.
