If you can find a copy of these books that were originally copyright in 1951 and 1952 you will probably find them very helpful:
Samuel Moore, Historical Outlines of English Sounds and Inflections.
--particularly chapters IV The Language of Chaucer, V The Development of Middle English Sounds, VI The Development of Middle English Inflections, VII Middle English Dialects.
Frenand Mossé, A Handbook of Middle English.
--contains an extensive grammar, a reader of texts grouped by century and quite an extensive Middle-to-Modern English dictionary.
