Why, in the Liturgy, does the Priest say, "The Doors, The Doors"?

Originally, it was a signal to the subdeacons to close the doors before the Creed and Liturgy of the Faithful, after the dismissal of the catehumans. That part of the liturgy used only to be open to those who had been baptized. This served the purpose of keeping out informants in times of persecution.
