From my Polish side, I enjoy these:  http://www.youtube.com/watch?v=9H3hQk6jCyI&list=SPE68CC223FE950DB9&index=1

With some exceptions I do not like professional choral performances of carols. They originated as simple, rustic songs and they should be treated as such. Sophisticating them  by force is wrong.

What version do you prefer (take into account that Animal is tolling according to the Orthodox way, not the RC one)?

I prefer the 24 Days of Journeymas for my tolling.

Strangely enough, you still get a partridge in a pear tree. Must've been some pagan symbolism there after all.

Quite minimal christian content, the religious themes are more archaic, more like pre-christian mythology:

Nice one ^

FYI:
"An old American hymn from the Sacred Harp tradition of 'a capella' singing which flourished in the north eastern United States in the late 18th and early 19th centuries and spread to the southern states. The noble melody is anonymous but the text, which is a meditation on the Christmas story, is by Reginald Heber and was written in 1811:

Hail the blest morn! See the great Mediator
down from the regions of glory descend.
Shepherds go worship the babe in the manger;
lo! for his guard the bright angels attend.
Brightest and best of the sons of the morning,
dawn on our darkness and lend us thine aid.
Star in the East, the horizon adorning,
guide where our infant Redeemer is laid.

Cold on his cradle the dew-drops are shining,
low lies His bed with the beasts of the stall.
Angels adore Him in slumber reclining,
wise men and shepherds before Him do fall.
Brightest and best, etc . . .

Vainly we offer each ample oblation,
Vainly with gifts would His favor secure.
Richer by far is the heart's adoration,
dearer to God are the prayers of the poor.
Brightest and best, etc . . ."
"If but ten of us lead a holy life, we shall kindle a fire which shall light up the entire city."

You're American. You teach Latin. You love Latin chant. And you're attending...Greek parish while being annoyed it's not Greek enough. Logic?

Who are you to say that teaching Latin, liking Latin hymns, Gregorian plainsong, being Greek Orthodox while attending an Antiochian parish and lamenting that any Greek has been banished and being an American on top of it all is illogical?  I also play bass guitar and played in several heavy metal bands including an Iron Maiden cover band?  I think your problem is that you have failed to categorize me, which makes me wonder why you care so much.  Maybe because your own life is boring? Way to distract from the topic.

Coverdale's Carol (words by Martin Luther, Englished by Miles Coverdale).

Rorate caeli desuper (words by William Dunbar, set to Scots air by the editors of The Oxford Book of Carols).

I wonder as I wander (words & air by John Jacob Niles, based on a field-collected fragment).

Tomorrow will be my dancing day.

Christmas now is drawing near at hand.

A stable lamp is lighted (words by Richard Wilbur, air by David Hurd).

God rest you merry (there is no such song as "God rest YE merry".  "You" is the object of the transitive verb "rest").

Personent hodie.

Of the Father's love begotten (English paraphrase of Corde natus ex parentis).

Es ist ein Ros.

While shepherd watched their flocks by night.

The first nowell.

.....and many others.

In the American Episcopal rite, Psalm 90 (89 in the LXX) is appointed for Evensong on the eve of the Holy Name / Circumcision (January 1st)

Here is a shape-note setting of a metrical paraphrase of Psalm 90:
