A few years ago, a priest gave me some cake. I checked whether it had milk or eggs as it was during Lent. He said it did not and that they wouldn't give me anything non-fasting. This was a basic "brown" cake - made of ordinary dough mixed with cocoa or dark chocolate. It might even have had icing but I don't remember.

So, are there any recepies for this out there - basic cake with no milk or eggs, and the option of cocoa/chocolate mixed in and even (dare I ask?) fast-friendly chocolate icing on top, that someone could share?

Here is one you may like:

Lenten Chocolate cake

3 cups flour
2 tsps. soda
6 Tbsps. cocoa (Ghirardelli is excellent)
1 tsp. salt
2 cups sugar
3 tbsps. vinegar
2 tsps. vanilla
3/4 cup of oil (salad, corn, etc.)
2 cups cold water

Measure flour, soda, cocoa, salt and sugar into large mixing bowl. Add vinegar, vanilla, oil and water and mix well. Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degress for 45 minutes.

Chocolate icing

Mix powdered sugar, cocoa and a little softened margarine. Add enough warm water to make a smooth, creamy icing.

I've not tested this recipe out, so unfortunately I have no idea how good it may be. I recently purchased a Lenten cookbook and after reading your post, I thought I'd check to see if there was one in there and sure enough there was! If you try it, be sure to let me know how it is, okay?

Here is another one I found online:

Lenten Chocolate Cake

Preheat oven to 350

3 c. flour
3 tsp. baking soda
1 tsp. salt
2 c. sugar
3/4 c. cocoa
2 tsp. white vinegar
1 c. mazola
2 c. water
2 tsp. vanilla
1/2 bag Ghirardelli chocolate chips (optional)

1. Mix together flour, baking soda, salt, sugar, and cocoa.
2. Add rest of ingredients and mix well.
3. Pour into greased and floured pan and bake for 45 minutes or until done.
