There was a short book called 'Athanasius and the Incarnation' . . .Why do Buddhists believe in "reincarnation" but Athanasius is only point to one definite incarnation of Jesus Christ...

In Upanishadic religions (Buddhism, Hinduism, Jainism) "Re-incarnation" refers to rebirth in a new body after death. This is often called the "hell of rebirth" or "samsara", a cycle of re-incarnation, death, and re-incarnation that must be escaped for one to escape suffering.

St. Athanasius is using "incarnation" in the Christian meaning, that is, the birth in-time of the Word of God as a real human being. Christians do not believe in Samsara.

Are you asking why the Incarnation of Jesus Christ was a single event as opposed the the Indian philosophies of the reincarnations of the different avatars and God-men?

Corrected. In Hindu philosophy, there are several bodies with which the innermost soul is associated. The physical body is released at death, but other bodies (like the subtle body, and the causal body) remain associated with the innermost soul. Many Hindu philosophies believe that the innermost soul is always associated with a body (say, the causal body, which is the body closest to the innermost soul).
