Can anyone point me to conversations and dialogues between Orthodox Fathers and Jews , like the dialogue of Justin with Trypho? And to the dialogues of the Orthodox Church with the Jews and Judaism?

That work by St. Justin probably wasn't an actual dialogue, but was more likely a scripted fictional dialogue. Other works by Church Fathers having to do with the Jews include:

Tertullian - An Answer to the Jews
St. Cyprian of Carthage - Three Books of Testimonies Against the Jews (Book One, Book Two, Book Three)
St. Ambrose of Milan - Letter 77: To Horontianus
St. John Chrysostom - Eight Homilies Against the Jews
The Dialogue of Simon and Theophilus
Dialogue of Athanasius and Zacchaeus
Dialogue of Timothy and Aquila

(There is a book out with, I believe, these last three)
