So tonight I've been putting together a list of cookies that I am going to start baking tomorrow, and I thought it might be fun to have a thread where we name some of our favorite cookies, and post some recipes.
Right now I plan on making sugar cookies, gingerbread men, chocolate chip cookies, hazelnut biscotti, and almond macaroons. I'm also contemplating making butter tarts for my stepfather, who is Canadian.

My favorite no-bake Oatmeal Cookies, just like Mom used to make*... 2 cups sugar 4 tablespoons cocoa 1/2 cup milk 1 pinch salt 1 stick butter 1 1/2 teaspoons vanilla 1/2 cup peanut butter 3 cups oatmeal Combine everything except the oatmeal and peanut butter. Stir till it comes to a boil for 45 seconds, then remove from heat and mix peanut butter in. Next mix oatmeal in. Drop on wax paper, let set, and then devour. *Actually, despite it being her recipe, they still don't turn out the way Mom made them  |

I am the worst baker ever, but a very grateful cookie eater. My friend, every Christmas, makes cookies for my husband and I. We just about polished off the tin within a week.
Those cookies sound very yummy, HoG! I'm sure they will be well appreciated.
My favorites at the moment are meringue cookies. Light and delicious. I can eat those all day. Trader Joes makes meringues that taste like the Lucky Charms cereal marshmallows.

Thank you for reminding me to pull a pound of butter out of the freezer! I want to make shortbread (three ingredients: flour, sugar, butter). Will also do butter tarts; they're not hard to do. But don't stir raisins (or whatever else) into your melted butter/sugar mixture as many recipes will tell you - you won't get an even distribution - put some in each tart shell before pouring in the liquid filling.
One really easy recipe (no-bake):
1 cup peanut butter
1 cup honey
1 cup chocolate chips
1 cup unsalted peanuts
3 cups Rice Krispies (or generic equivalent of name brand)
Melt pb and honey together. Turn heat off and stir in choc chips until they melt. Stir in peanuts. Stir in Rice Kr. Press into pan. Let cool. Cut and serve.
Amazingly delicious. People will think you slaved for hours!

This is a classic my grandmother made for many years.
Mix and knead in a large bowl:
1# cottage cheese
1# shortening
4 c. flour
Refrigerate at least 3 hours. Divide into 6 parts. Roll each as if for a pie crust.
Cover the rolled dough with mixture of:
2 c. brown sugar
1 c. chopped nutmeats
2 T. cinnamon
Cut each of the 6 dough circles into 12 wedges. Roll up each wedge starting at the wide end. Put on ungreased cookie sheets and bake at 325 for 20 minutes or until golden. Cool and ice.
Icing:
4 T. water
4 T. sugar
Cook 1 minute. Beat in:
1/2 c. shortening
1 egg
1 t. vanilla
1# powdered sugar

My personal favorite. Sorry I don't. My mother and sister do bake them but trying to get any written recipe from them is close to impossible. They think they hold the secret to enriched uranium. |
