I am soon about to order a few books that I hope will help on my journey toward Orthodoxy, and I wanted to buy one that deals with prayer, either from the Fathers or more modern authors. So, if you could recommend only one (or maybe a few...) what would they be? I'm not looking for a prayer book per se, but more something that will help me cultivate a prayer life.

I highly recommend: "Orthodox Prayer Life: The Interior Way" written by the renowned Coptic Orthodox monk Father Mathew the poor. Although the writer is Oriental Orthodox, he quotes in this books a lot of Eastern Orthodox saints. The book is a journey through the stages of prayer until one reaches the union with God.
This is the most edifying book I've ever read about prayer.

2nd that.  Great book.  I also read "Courage to Pray" by Met. Anthony.  It was also wonderful.
