I'm curious about the distinctions between the Orthodox sacrament of Chrismation, and the RC sacrament of Confirmation, other than the obvious difference in the ages at which cradles are usually chrismated/confirmed.

Are they very different, in essence?

Are confirmed RC converts always chrismated upon reception into Orthodoxy, or not? How about vice versa?

Bearing in mind that I don't know much about the theology of RC confirmation, I would say, yes. In chrismation, you are sealed with the gift of the Holy Spirit - anointed on your ears, lips, heart, feet, hands.

AFAIK, and have observed, yes, they are always chrismated. The understanding is that chrismation supplies all that was lacking in the heterodox baptism.
