Why do orthodox fast on wednsedays and fridays?
Is it only a partial fast of just meat and dairy?

Wednesday because of the betrayal and Friday because of the Cross. What else is there besides meat and dairy?

My new Priest takes these fasts VERY seriously which is very hard on me because I take eating even more seriously than he takes fasting. I guess that is why God led me to him. I'm working under the assumption that it was for him to convert me and not the other way around

The fasts on wed and fri should be observed in the same manner as weekdays of Great Lent.

The Wednesday/Friday fast is, I think, the oldest recorded fast observed by Christians. It's older than the Lenten fast. (If I have this wrong, please someone correct me.  ) It's mentioned in the Didache, a Christian document dating back to the first century: http://www.earlychristianwritings.com/text/didache-lake.html(See chapter 8 )
