Does the western rite keep the same fasts as the east in terms of those of the holy apostles , dormition ect. ?

No, the Apostles' and Dormition fasts were never observed in the West. There are some fasts that we do that the East does not, such as the fasts during Ember days that occur four times a year.

During what days?

The Wednesday, Thursday, and Friday of:

Ember days are Wednesday, Friday, and Saturday for each of the above.

Btw, I was at the WRO Holy Incarnation in Detroit, and this topic came up, and the priest made the observation that they are more regulations on how much, rather than what, is eaten.
