Given the recent discussion on Infant Dedication where the Infant is considered a cathecumen from time of Churching until time of Baptism, does the same hold true for a non-Orthodox Mother who Churches an Infant in the Orthodox Church?

I don't think so, but "ask a priest" is a safer answer.
