 Because to most Western ears, that would sound 'weird' or 'horrible'.  I'm basing my opinion off the looks I get when I play music from different cultures.  However, having said that, l also enjoy Ambient or Space Music (what you've referred to as New Age).  For those of you who enjoy that sort of music, check out Hearts of Space.

Because, no matter how creative or gifted one is, they can't wholly immerse themselves or absorb the ethos of a place over a short time span. Same goes for lay musicians who try to chant...

I don't really equate ambient music with "new age." There is plenty of ambient music which is not cheesy or superficial. Hearts of Space however is pretty awful.
